Greek fish roe dip - taramosalata with wild greens and MESIMERI extra virgin olive oil .

For the fish roe dip - taramosalata, soak the stale bread in water and squeeze it well, so that the liquid is removed.
Fine chop the onion, squeeze it to remove the liquid and pour it into the blender.
Then add the fish roe, bread, pepper and lemon juice and whip it over high speed for 1 minute.
Lower the speed and gradually add the extra virgin olive oil. If the texture is too thick, dilute with water and continue beating until it reaches a fine texture.
