Recipe for velvet pea soup with fresh herbs, bacon, Kalamon olives fillet & extra virgin olive oil MESIMERI

Velvet pea soup with MESIMERI juice

Velvet pea soup with fresh herbs, smoked bacon, fillet of olives Kalamon & MESIMERI extra virgin olive oil.

Ingredients for 4 servings:

  • 500 g peas, frozen and chilled
  • 1 tsp. extra virgin olive oil MESIMERI
  • 1 clove of garlic
  • 1 small dried onion, finely chopped
  • 250 ml vegetable stock
  • 8 mint leaves (fresh)
  • 100 g smoked bacon
  • Olive fillet
  • 100 g whipped cream
  • Salt & pepper

Instructions:

  • In a small saucepan, heat the MESIMERI extra virgin olive oil and sauté the dry onion over high heat for 3-4 minutes until they become soft.
  • Then add the crushed garlic, sauté for 1 min and then remove.
  • Add the chilled peas along with the vegetable stock and 4 mint leaves. Let it come to boil and then simmer for 5 minutes.
  • Use a hand blender to puree the pea soup. If you want a thinner soup, add a little whipped cream. Add salt and pepper.
  • Serve at room temperature with a spoonful of whipped cream, olive fillet, smoked bacon, drops of MESIMERI extra virgin olive oil and mint leaves.
