Potato Salad with MESIMERI flavor

Baby potatoes with Mani traditional salted pork, orange fillet, olive paste, fennel tzatziki, and extra virgin olive oil MESIMERI.

INGREDIENTS:

  • Extra virgin olive oil MESIMERI
  • 1 kg baby potatoes
  • 100g Mani sundried tomatoes
  • Orange fillet
  • Fresh thyme
  • Salt flakes
  • 4 olives
  • Olive paste
  • Fennel tzatziki

For the Fennel Tzatziki:

  • 500g yogurt
  • 20ml ouzo
  • 1 medium-sized grated fennel
  • Juice of 1 lime
  • Finely chopped fennel leaves
  • Salt
  • Pepper

INSTRUCTIONS:

For the potato salad:

  • Boil the baby potatoes.
  • Once boiled, place them on a plate in irregular pieces. Add olive paste, orange fillet, Mani sundried tomatoes, salt, pepper, MESIMERI EVOO, olives, fresh thyme, and top it with Fennel tzatziki.

For the Marathoriza Tzatziki:

  • In a bowl, mix yogurt, grated fennel, ouzo, salt, pepper, MESIMERI EVOO, lime juice, and finely chopped fennel leaves.
