Focaccia with cherry tomatoes, fresh onion & olives Kalamon MESIMERI

Ingredients for focaccia:

In a mixer's bowl or in a large and deep bowl, combine the flour, salt, sugar and yeast.
Add the water along with 2 tablespoons of MESIMERI extra virgin olive oil and knead until the dough is smooth and soft.
Grease a bowl and place the dough in it. Cover it with a towel and leave it in a warm place for about an hour until it has doubled in volume.
Heat the oven to 240 °C.
Grease well a baking tray. Sprinkle a flat surface with flour and place the dough on it.
Knead it for about 2-3 minutes and place it on the baking tray, pressing it gently until it covers the surface of the tray.
Smear the dough with the remaining MESIMERI extra virgin olive oil and place the MESIMERI Kalamata olives on top, pressing them lightly so that they stick to the dough. Then add rosemary and coarse salt.
Bake for about 12 - 15 minutes until golden brown and serve with MESIMERI extra virgin olive oil.
