MESIMERI Greek baked beans

Baked beans with peppers Florinis, fresh herbs, Greek traditional sausage & MESIMERI extra virgin olive oil.

Instructions:

Soak the beans for 24 hrs, then rinse and drain them.
Put them in a large pot with plenty of cold water and boil them over medium heat for about 50 minutes, until they are half cooked. Drain and set aside. Heat the oven at 200°C.
In a saucepan, heat half the MESIMERI extra virgin olive oil over medium heat and sauté the onions and peppers for 10 to 15 minutes, until softened and lightly browned.
Add the tomato paste to 1 glass of water and pour it into the sautéed onions, add 1 litre of water, add salt, spices and herbs to bring everything to boil, then turn off the heat.
Place the half-boiled beans in the oven tray and add the sauce, the sausage and the remaining MESIMERI extra virgin olive oil.
Mix well. Make sure the beans are covered with enough broth, because they are half baked and need more cooking in the oven. If necessary, top up with hot water.
Place the baking tray in the oven and bake for about 1 hour. The beans, when ready, should be dry and browned.
