Cornbread with raisins, turmeric and MESIMERI extra virgin olive oil.

Add the yeast and water in the mixer and mix at low speed. Make a well in the center, then add the cornmeal, hard flour, turmeric, MESIMERI extra virgin olive oil, salt and sugar and knead at high speed, until the ingredients are homogenized, and the dough is satin-smooth.
Place the dough to a lightly oiled bowl, cover with cling film and let it double in size (about 1 hour).
Line a baking tray with baking parchment, place the dough on the parchment, add the raisins, and mold the dough into a loaf. Cover with film and leave the dough to prove for half an hour, until it rises.
Heat the oven to 180o C. Before putting the bread in the oven, sprinkle the surface with cornmeal and bake it for about 45 minutes until golden brown.
Take the bread out of the oven, place it on a wire rack and let it cool completely before slicing.
