Bruschetta MESIMERI with Pesto and Mozzarella
Bruschetta with homemade pesto, tomato, mozzarella, pine nuts, fleur de sel, and extra virgin olive oil MESIMERI.
INGREDIENTS:
For the pesto:
Extra virgin olive oil MESIMERI
100g basil
100g pine nuts
100g Parmesan cheese
1 clove of garlic
Salt
Pepper
For serving:
Extra virgin olive oil MESIMERI
3 slices of toasted bread
1 mozzarella, sliced
1 tomato, sliced
Salt flakes
Pepper
Pine nuts
INSTRUCTIONS:
For the pesto:
In a bowl, combine pine nuts, Parmesan cheese, basil, garlic, salt, and pepper. Blend the ingredients together.
Gradually add MESIMERI EVOO until you achieve a smooth texture.
For the bruschetta:
Cut the tomatoes and mozzarella into slices.
Spread the pesto on the toasted bread slices.
Arrange the tomato and mozzarella slices alternately on top of the pesto.
Repeat the same process for all the bread slices.
Serve with MESIMERI EVOO and sprinkle with pine nuts.
